Pumpkins and Pepitas

Pumpkins are known to be a very nutritious fruit, especially pumpkin seeds. bid=82" target="_blank">World’s Healthiest Foods claims that pumpkin seeds (otherwise known as pepitas) “are one of the most nutritious and flavoursome seeds around”. These roasted seeds are flat and dark green, and are available all year round. Pepitas claim to reduce the risk of prostate cancer and arthritis, and aid in lowering cholesterol. I sprinkle them on my cereal in the morning, but they can also be thrown into salads or ground for burgers and salad dressings.

Like the carrot, pumpkins are orange because they contain massive amounts of beta-carotene, which turns into vitamin A. In one cup of pumpkin puree, you will receive 310% of the Recommended Dietary Allowance (RDA) for Vitamin A. Pumpkin is also a good source of magnesium and fibre. Roast pumpkin is a sweet alternative to potato with roast meats, and you can’t beat a warm, hearty pumpkin soup this winter.

yes i agree pumpkins are a vital source of goodness to your daily well-being. personally i eat pumpkin as often as i can get my hands on it. i love a good tender pumpkin on a cold night to have my way with... i just like to slowly roast it and then make it tender and juicy and then put it in a soup!!! and then...
